However, lump charcoal is known to burn unevenly, with the heat primarily occurring in the beginning.

Charcoal Briquettes
Charcoal briquettes (also spelled briquetes) are made by compressing wood by-products with additives. They can contain various materials such as sawdust, coal dust, wax, and more. Briquettes are known to have an unpleasant scent when lit, a feature associated with the ingredients. You can prevent the scent from transferring to your food by burning the charcoal first. When the white ash covers the briquettes, you will be good to start grilling. Healthier, chemical-free briquette alternatives exist, as some companies make them with pure wood. However, the additives help briquettes burn consistently, something they are favored for.
